- Juice of 2 lemons
- 4 cloves garlic, minced
- 2 teaspoons of dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and black pepper to taste
Instructions
Principal
- MARINADE: In a large bowl, mix the olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper. Add the chicken cubes and mix well. Cover and let marinate in the refrigerator for at least 30 minutes or up to 4 hours.
- PREPARATION: Preheat the oven to 220°C. Line a large baking sheet with parchment paper or aluminum foil.
- ASSEMBLY: Arrange the marinated chicken on one half of the baking sheet. On the other half, place the vegetables (bell peppers, onion, zucchini, and tomatoes). Drizzle the vegetables with olive oil and season with salt and pepper.
- BAKE: Bake for 25-30 minutes, or until the chicken is completely cooked (internal temperature of 75°C) and the vegetables are tender and lightly caramelized.
- FINISHING: Remove from the oven and let rest for 5 minutes. If desired, place under the broiler for 2-3 minutes to brown more.
- TO SERVE: Serve the chicken and vegetables over warmed pita bread, accompanied by tzatziki sauce, crumbled feta cheese, olives, and fresh mint.
